Greek Chicken Salad
May 04, 2021I absolutely love this salad! It’s really the creamy, decadent dressing that gets me going. :) It’s so easy to make, tastes delicious, and feels incredible in my body all day long. I love baking the chicken on the day of, because fresh baked chicken is always better than leftover, but it can be made with left over chicken or fish or without any meat at all! Ingredients:

Arugula (or greens of choice)

Cucumber, chopped into bite sizeable pieces

Grape tomatoes, sliced in half

Kalamata Olives
-
Baked chicken breast
-
Olive oil
-
Full fat Greek yogurt ~1/4 cup

Minced garlic ~ 1/2 tsp
-
Juice of 1/2 lemon
Directions:

To make the dressing, combine the yogurt, lemon juice and garlic in a bowl and set aside.

Assemble your salad: arugula, cucumbers, tomatoes, olives, top with sliced chicken

Drizzle yogurt dressing all over

Drizzle just a touch of olive oil to make it extra amazing
