Chicken & Sausage Rice Skillet
Sep 22, 2020Make it any spicy flavor you want by changing up the sausage flavors! I used a chicken & apple sausage to keep it mild for the kiddos, but a spicy andouille would make it cajuny delicious.
Yield: 4-5 servings Prep time: 10 minutes Cook time: 15 minutes + time to bake chicken (can be made ahead of time)

Ingredients

1 Tbsp butter or avocado oil

1 green bell pepper, thinly sliced

1 red bell pepper, thinly sliced

1/2 yellow onion, diced

3 cloves garlic, minced

1 lemon
-
Sliced sausage (andouille or flavor of your choice - be sure to check the label for no sugar added varieties!)

2 cups cooked chicken breast or thighs, cubed

3 cups riced cauliflower
-
1 Tbsp fresh lemon juice (about 1/2 lemon)

1/4 cup chicken stock
-
1/2 tsp sea salt
-
1/4 tsp ground black pepper
-
1 tsp dried oregano
-
1/2 tsp paprika
-
dried parsley for garnish (optional)

Sliced avocado (optional)
Directions:

Cook the chicken if not done ahead of time. I just bake mine with avocado oil and salt in the oven at 375 for 35-40 minutes. Allow to cool slightly, then cut into cubes.

Melt the butter in a large sauté pan over medium heat. Once melted, add the peppers, onion, garlic and cook for 5-6 minutes until fragrant and browned. Removed from heat to a separate bowl and set aside.

Cut the lemon in half and place the halves cut side down in the pan for 1-2 minutes until browned, then set aside.

Add the sausage and chicken to the pan and cook until slightly browned, 5-6 minutes, then transfer to the bowl with the vegetables.

To make the rice, melt the butter in the same pan. Once melted, add the rest of the ingredients for the rice and stir to combine. Cook until warmed through, scraping the bottom of the pan to get all the delicious brown bits.

Top the rice with the veggie, sausage and chicken. Garnish with parsley and the charred lemon. Top with avocado as desired.
