Burger Bowls!!

Burger bowls are an amazingly delicious and easy weeknight dinner, but also a total crowd pleaser for weekend guests, sleepovers, family get togethers, you name it! I just love how satisfying they are and I love that we can have an American classic on our normal meal routine without any of the guilt! Here’s my favorite way to make it, but obviously these can be spiced up anyway you like. Read your labels to avoid hidden sugars in sauces, and add all the veggies you want to make this a real treat. Add bacon, jalapeños, buffalo sauce, mushrooms sautéed in butter, or just eat it plain! Tag me in on ista when you make it or leave a comment to tell me what your favorite variety is!

Increase Ingredients depending on your crowd size. This is for about 4 people:

Ingredients:

  • 1 lb beef *I love waygu beef but always choose a higher fat content, grass fed beef for highest nutritional quality

  • Seasoning of choice: **I recommend Gabby’s Go To Blend from Williams Sonoma

  • 3 medium sweet potatoes

  • Avocado Oil

  • Sea salt

  • 1 bunch arugula

  • 1 red onion

  • 1 cup vinegar (I use apple cider usually, but white or red works too)

  • grape tomatoes, sliced in half

  • 2 avocados, sliced

  • Dill pickles, sliced

  • No sugar added ketchup

  • Mustard

  • Primal Kitchen Avocado Oil Mayonaise

Instructions:

First pickle the onions. Slice the onion and place in a medium bowl or mason jar with a lid. Cover with vinegar, sprinkle with salt and cover for 20-30 minutes

Cook the sweet potatoes. Peel and dice the sweet potatoes and place in a medium bowl. Drizzle with avocado oil and sprinkle with salt. Cook in an air fryer at 400 degrees for 20-25 minutes, stirring 2-3 times throughout. **If you don’t have an air fryer, you can cook these in the oven. Just bake at 400 degrees for about 35 - 40 minutes, stirring frequently. If you don’t want them as done, you can shorten the cooking time. I like mine a little crispy.

Make the hamburger patties. Heat a large cast iron skillet over medium heat, or heat an outdoor grill. Mix the beef and seasonings in a large bowl until combined. Form the beef into patties and cook until browned, about 7 minutes per side depending on desired doneness.

Build the Bowls! Place arugula in each bowl. Top with avocado, tomatoes, pickles, onions, sweet potatoes, and beef patty. Top with ketchup, mustard and avocado oil mayo. I eat mine with a knife and fork and love every minute. Mix up the toppings to your heart’s content. Enjoy!!
