Honey Garlic Pork

Well THIS was delicious!!! Holy moly! I whipped this together for a super busy night and left it all warming in the oven for the family to eat in shifts. When I got home after all the kids had been transported and taken care of, Mike was in the kitchen with a very satisfied grin and said “Man! That was amazing!” So that feels like a win. And it was so easy!!

Here ya go:

Ingredients:

  • Pulled Pork ~ 4 cups worth/2 lb roast is generous, but more is alway awesome (prepare in advance)

  • 1 tbsp butter or ghee

  • 4 cloves garlic, minced (jarred is perfect amazing)

  • 1/2 tsp sea salt

  • Honey sauce

    • 1/4 cup honey

    • 3 Tbsp apple cider vinegar

    • 3 Tbsp coconut aminos

    • 1 tsp toasted sesame oil

    • 1/4 tsp red pepper flakes

  • Coconut cauliflower rice

    • 1 head cauliflower

    • 2 Tbsp coconut oil

    • 1/2 tsp sea salt

  • Oven roasted broccoli

    • Broccoli

    • Avocado oil

    • sea salt

Instructions:

  1. Roast the pork: I like to do this in the morning on the day I plan to make the bowls, but it can be done days in advance. Preheat the oven to 325. Salt the pork generously. Heat 1 tbsp avocado oil in a dutch oven or cast iron skillet and sear the pork on all sides. Once browned, pour 1 1/2 cups water or broth into the pot, then cover with the lid and transfer to the oven. Cook for ~30 min per pound or until the meat shreds easily. Once cooking is complete, shred the pork and store in the refrigerator until ready to prepare the meal. *This can also be done in your instant pot or slow cooker.

  2. Make the honey sauce: Place all the ingredients I a jar and whisk until fully combined, then store in the refrigerator for later use. *Can be made earlier in the week

  3. Roast the broccoli: Preheat oven to 350. Chop broccoli and drizzle with avocado oil and sea salt. Bake until crispy ~25-30 min.

  4. Make the cauliflower-rice: chop the cauliflower and place in a food processor to create rice like pieces. Warm coconut oil in a large skillet, add cauliflower rice and sprinkle with salt. Add extra oil as needed. Stir frequently until slightly browned.

  5. Place the butter or ghee in a large skillet over medium high heat. Once hot, add the garlic and cook for 30 seconds or until fragrant. Remove the garlic from the pan and set aside.

  6. Spread the pork evenly across the pan and sprinkle with the salt. Cook for 2-3 minutes, until the pork starts to brown, then flip and cook for an additional 2-3 minutes, until browned on the other side.

  7. Pour the honey sauce and cooked garlic over the browned pork and stir to combine. Cook for 2-3 minutes, until the sauce bubbles and begins to reduce.

  8. Serve the pork mixture and broccoli over the rice and enjoy!!
